Short Question: When making the bone broth base for a Pho do you roast the bones before or after parboiling?

Very common question is which order to do it in. At my store I roast first before parboiling.

My work flow:
Carton of bones - baking tray - oven - dump roasted bones into pan - parboil - dump water - fill with fresh water - simmer 24 hours - scoop out bones once - extract the bone broth.

The main reason I roast first is so I don't have to scoop out the large volume of bones out twice (if I parboiled first I would have to scoop the bones out before roasting. Then again at the end of simmering = a lot of work).

At home it doesn't really matter which way you do it. When working with such a small volume of bones you can do either way. If you parboil first then roast - straight into pot and simmer.

On occasions I have skipped the parboiling altogether and I have found it doesn't make a huge difference.
