Описание

This mashed Aubergine recipe (Baingan ka Bharta in Hindi) is an easy to make, smoky and delicious Aubergine recipe Indian style. It's 100% plant-basd and packed with aromatic spices and aromas. It goes perfectly with chapati (Indian flat bread). Or just warm some tortillas just like I did in this recipe ;)

Recipe - Mashed Aubergine

Ingredients:
2 Eggplant/aubergine (500-550 gm)
3 medium sized onions (chopped)
2 large tomatoes (chopped)
2 tsp ginger-garlic paste (minced ginger and garlic)
1/2 cup Chopped coriander leaves
1/2 tsp Asafoetida(hing) (optional)
1 tsp Cumin seeds
1/2 tsp Turmeric
1/2 Red chilli powder (ground chilli)
1tsp Cumin powder (ground cumin)
1tsp Coriander powder (ground coriander)
1/2tsp Garam masala
Salt to taste
3tbs Oil

Instructions:
- Make a long cut along the length of the aubergine (both sides) and insert 1-2 cloves of garlic on each side.
- Turn on the flame and put the aubergine on the gas stove and roast it on medium flame. (You need place is just above the fire. For example of a metal rack)
- Alternatively, roast the aubergine in Oven for 25-30 mins at 180C.
- Change side and roast it till it is cooked properly from all the sides.
Once the aubergines are well roasted, turn off the flame and let it cool down completely.
- Once cooled, remove the stem, peel off the skin and mash it along with roasted garlic.
- Heat 3tbs of oil in a pan
- Add cumin seeds and hing, fry it for few seconds on medium flame.
- Now add the chopped onions and fry it for another 2 minutes
- Add ginger garlic paste, mix it and fry it for half a minute on medium flame.
- Reduce the flame to low, add turmeric, red chilli, cumin and coriander.
- Mix it well and cook it for 1 minute on low flame.
- Add the chopped tomatoes, mix it and cook it for 2-3 minutes on low-medium flame.
- Add the mashed aubergine, salt, garam masala and coriander leaves, mix it well.
- Cook for another 1 minute (keep mizing).
- Turn off the flame, Baingan ka Bharta is ready to be served :)
